It's quite by accident I found this product - on another website to boot. I had been looking for what I called a "burner grid" for about 2 years for our motorhome. The gas burners do not go low enough to simmer. I had checked all kinds of websites and stores over the past couple of years to no avail. Then I came across a mention of a "cooking mat" somewhere & had to check it on Amazon, which, of course, had the best price. I was ecstatic to find it. I really thought I was looking for a product that no one made & I would never find. It works just like it's supposed to: it sets over the burner (in my case, gas) and diffuses the heat enough to enable you to maintain a low simmer. No more burned sauces or soups! Thank you, thank you.

I used this (my mom's) product during our annual holiday open house cooking.After melting chocolate without a double boiler and later simmering a chili for three hours and discovering not a bit of burn or scalding on either I found myself leaving a full pot of rice on the stove and searching Amazon for the Simmer Mat.The stove in my (rental) apartment is not nearly as controllable as I would like and I have spent all too many evening's constantly stirring sauces and cleaning burnt food from pots. This is, without a doubt, the best kitchen "gadget" I have purchased in ages.Highly, highly, recommended.

The product description is at odds with the product usage instructions. According to the instructions this heat defuser should only be placed on burner when the food is already cooked to keep the food simmering and should never be used on a cold burner or at the start or middle of the cooking process. For example if you intend to make a delicate dessert that requires constant stirring like a pudding, then you may still scorch the pudding because this device isn't supposed to be used at the start or during the cooking process.
