I wanted a mat that would release bread and pastry dough easily, but that also stood up to cutting out the dough. This mat does both. It's a little large for my counter space, so I'm buying a second mat so I can trim it some and have both a large and smaller mat.I purchased a silicone mat and a thin Magic Dough mat...neither would stand up to cutting out pastry or biscuits or slicing up dough strands, etc. This mat does. I threw the others away after trying this mat - it's a keeper and the price is right.
