When I smoke ribs I use the 3-2-1 method and after 3 hours of smoking at 225F the ribs come off of the smoker. I wrap the ribs in a PanSaver sheet, then in plastic wrap, then foil and the ribs go into an 225F oven for two hours. The ribs are removed from the wrap and go back into the oven to finish off.
