the most irritating thing about this mat is its permanent crease. upon further examination, you can even see it clearly in the photos on the product page. it has a persistent hump in the center, which sort of defeats the purpose of this item and makes it much more difficult to work with dough.the ruler and circles are nice, but the mat (as mentioned in other reviews) does need to be floured every time, and since the hump won't go away, it makes it difficult to keep the central portion of your dough from sticking to the mat because the flour falls off to the sides.mat is also extremely easy to cut, as i realized the first time i used it with a dull dough knife. oops.save your bucks, the counter is far easier to clean. recipes are nice but surely not worth the investment.

After reading the glowing reviews about this mat, my expectations were probably too high. Now, I will continue using the mat while allowing for its limitations.I still have to generously flour its surface just as I did my counter top when rolling out pizza dough. I don't flour it for ginger snaps but I have to very slowly and gently coax them off the mat because they try to stick - guess I will have to start flouring them also.I can avoid the flour if I leave the dough on the mat and stick the whole thing in the oven. Having done this a couple of times, the mat is all stained and scorched looking, it will not wash off.The large size is good for a rolling surface but when it comes time to wash it there is no longer any ease of handling. Yes, it can be washed but it is an aggravation.I bought a smaller mat of a different brand to place between the rolling pin and the dough. It too has to be floured but works well because it keeps dough off the surface of my rolling pin.Comparing price and effectiveness of the two, I would say that the Batali mat is sufficiently overpriced. The recipes printed on the mat are not worth the extra $5 [or even $2].Yes, I will continue to use the mat. Yes, I will continue to grouse about the mess I create when I wash it. Yes, I agree that anyone who handles dough frequently should have one. Just don't expect this mat to make it hassle-free.As mats go, maybe they all deserve 4 star ratings. This one gets 3 because of price, staining and the packaging crease down the middle that keeps it from laying flat.

I have two baking mats and this one is my favorite. It has a lot of heft and I like that weighty feel. The weight also keeps it from moving around on the counter. The circles are helpful for sizing dough properly. Easy to clean and store. It's dishwasher safe, but it's rather big and it's super easy to wash by hand.
